Homemade Strawberry Jam

A couple of months back, Pioneer Woman did a couple of posts on canning. Specifically, jam. Strawberry jam to be exact. I have been wanting to try my hand at canning for awhile now, so after reading her post - I decided to try it out.

I finally made the jam this weekend. Now, all of you know I am not a photographer and I really should leave the picture taking to Darren, but I got all excited to tell y'all how easy it was to make this jam, I took pictures to show you.

Ok, here is the recipe:

Homemade Strawberry Jam
  • 5 cups strawberries, hulled and mashed
  • 7 cups sugar
  • 4 tablespoons (fresh) lemon juice
  • 1 package powdered fruit pectin

First, you want to wash and hull (remove the green, leafy part) the strawberries. Or talk your husband into doing it and gripe at him to "hurry up already" while you watch him and call it "bonding".

Place the hulled strawberries in a bowl or on a baking pan and mash them up with a potato masher. You want small strawberry pieces, but you want to them pretty fine. Measure out 5 cups, and put them into a pot. Add 4 tablespoons of juice from a large lemon. Turn on the heat to your pot and bring strawberry/lemon juice mixture to a boil.

While you do that, put your jars in a big pot of water and put it on to simmer/low boil. Its great if you have a canning pot and rack, but I don't and it worked just fine - you just don't want your jars clanking around all willy nilly. Lay them down if you have to. You want them to get heated so that the hot jam doesn't bust them, but you don't want them to bust or crack while you are getting the jam ready.

On another burner, put the lids (not the screw part) in a small pot and get them to simmering as well.

Then add the 7 cups of sugar to the strawberry mixture (measure it out before hand so that you can add it all at once). Mix together to incorporate. Leave the heat on high and bring the mixture to a strong rolling boil. The kind of boil that doesn't calm down when you stir it with a spoon.

Add half a pat (tablespoon) of butter, to help reduce the "foam" that will start to form on the top of the strawberry mixture.

Then, just mix it in with your spoon.

Then, mix it in with your spoon and let it get to boiling again!

This foam will form on the stop of the mixture. Just use your spoon to get as much of it off, as possible. I recommend that you save that discarded foam, for later.

Then, shake the excess water off your jars, and with a wide mouth funnel, start pouring in the jam, one cup at a time (it makes it easier and less messy that way, trust me).

Ok, I know that you are staring at that jam splatter on my counter thinking "trust her, its not as messy that way? there is the messy proof, right there". But, I assure you, you would be picking out the one clean spot in a bright red, strawberry, sticky mess of a counter if I hadn't done it that way.

Continue until you have all of the jars full (leave about a fourth of an inch from the top). Then, run a butter knife around the edge of the jars to get all of the air bubbles out.
Put the lids on and seal them (do not tighten the screw lids). Then, stick them back in the boiling water for 10 more minutes. Then, turn the heat off the water and leave them for 5 more minutes.

Remove them from the water and let sit out on the counter (un-touched) for 24 hours. After 24 hours, you can tighten the screw band if you need to and then you are good to go.
Then, I like to get some cute fabric and cut it into a square and place over the top of the jar and then tie it with a cute raffia bow. It's cute, it's simple, it's homemade and it's delicious and everyone that you give it to will love you!
I plan on giving a jar out with a cute little Thanksgiving card, to all of my guests at Thanksgiving.
And remember that discarded foam or that sticky pot you cooked the strawberries in? They are just sitting there, waiting for you to enjoy them! It's not as "pretty" as the jam you just made, but its just as delicious!

Yes, yes that is a finger mark where I swiped some jam and "tested" it, right out of the pan.

It will definitely make you talk your husband into going out and getting a loaf of bread at 9 at night so that you can have a nice piece of toast and strawberry jam "gunk" before you go to bed.

Not that I did anything like that, I'm just saying...

That was the day that I picked Coco up from the breeder. We haven't had her quite a year, but oh how she has made herself a part of our family! Pretty much, our world revolves around her. She is our fur kid and our precious baby girl! I know, I know - I'm sure it will change when we have "real" children, but for now - we enjoy spoiling her rotten.

She is a genius, plain and simple. She is very smart and is easily trainable. We have been very good about training her on certain things and unfortunately, were lazy in other areas.

She was completely 100% potty trained in 4 weeks, she rings a bell to tell us that she needs to go outside, and she has been completely crate trained since the first month she was home with us.

She sits and lays down and she walks on a leash, well - she prances on a leash. She loves every single person, animal or child that she comes in contact with. She is great to take the the store, run errands or to play dates. It doesn't take her long to make "friends".

She has energy when you do and is lazy when you are. She loves being outside when its nice and inside when its rainy and cold. She snuggles, loves naps and steals kisses anytime she can! She does struggle with seperation anxiety, but is getting better with age.

She wants to be right in the mix of things and is very nosy. She has an attitude and a personality that is matched by no other person or 4 legged creature I have ever met. She has completely stolen our hearts and taken over our home and I absolutely, completely adore her and wouldn't have it any other way. She started out as a Christmas gift from Darren and has turned into the best gift our little family could have asked for.

We love you Coco!

Baked Spaghetti Squash with Beef and Veggies

This is the recipe I was telling y'all about yesterday. It is very easy, and both healthy and yummy which is always a good thing in my book.


Baked Spaghetti Squash with Beef & Veggies

Ingredients:
  • 1 spaghetti squash, halved and seeded
  • 1 pound lean ground beef/sirloin
  • ½ cup diced green bell pepper
  • ½ cup diced red bell pepper
  • ¼ cup diced red onion
  • 1 clove garlic, chopped
  • 1 can Italian-style diced tomatoes, drained
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 ¼ cups shredded Cheddar cheese
Directions
  1. Preheat oven to 350 degrees.
  2. Slice the spaghetti squash in half, and place "meat" side down into a 9 x 13 casserole dish. Fill the dish half full of water and place in the microwave for 10 minutes.

  3. After 10 minutes, take a fork and rake it along the squash to remove all of the pulp, place in a bowl and set aside.
  4. In a skillet over medium heat, cook the ground beef until evenly brown. Drain, and mix in the green pepper, red pepper, red onion, and garlic.
  5. Continue to cook and stir until vegetables are tender.
  6. Mix the shredded squash and tomatoes into the skillet, and season with oregano, basil, salt, and pepper.
  7. Cook and stir until heated through.
  8. Remove skillet from heat, and mix in 2 cups cheese until melted.
  9. Transfer to the prepared casserole dish.
  10. Bake 25 minutes in the preheated oven. Sprinkle with remaining cheese, and continue baking 5 minutes, until cheese is melted.

Makes 6 servings.

If you use the Weight Watchers shredded cheese (or something similiar in calorie/fat content), then each serving of this casserole is only 4 points!

I've Been Lazy!

I have no reason for not posting this past week, other than sheer laziness. I had very important things to post about.

And by very important I mean poorly lit, kind of fuzzy, pictures that I took with one hand while drinking a glass of wine with the other.

Proceed with caution.

Last weekend, Pops and Jackie came to visit. It was a very important trip because Pops wanted to go to Spec's. They don't have those around where they live. Such a shame! And Jackie wanted to go to Hancock Fabric, so we had a very important weekend planned.

So, Saturday, we spent all day driving around Houston and shopping. We ate Kolache's for breakfast and then went to the big Spec's downtown, the woodworking store, Hooter's for lunch, Hobby Lobby, two tool stores, Ross, Hancock Fabric, Barnes & Noble, Starbucks and then Chick-Fil-A for dinner. Do you know how hard it is to be "good" on Weight Watchers with a day like that?

We were completely worn out when we finally got home, so we weren't up long before we headed to bed.

Sadly enough, Jackie and I were too tired to try what I got at Spec's:

Its an apple wine with cinnamon and nutmeg.
I just loved the bottle - wouldn't that be cute for a Halloween party?

Sunday, Pops and Darren took down the old light fixture in the half bathroom and put up my new one while I made some lunch.

This is the new one, and the new hole I have in the wall that Darren now gets to fix.

I asked Darren if he could rip out the existing counter and put in the new on that we bought. I bribed him with a tasty home cooked dinner and he agreed. So, as he started in the bathroom, I got started in the kitchen.

First, I pre-heated my oven to 350. Ok, wait - first I poured myself a glass of warmed Hallowine (the bottle suggested that I drink it warm). I honestly wanted to warm the whole bottle but I thought that might be a little tacky, so I just heated up a glass.

Then, I heated up the oven to 350!

Then, I chopped up an onion, some celery, carrots, cut up some baby white potatoes and minced some garlic. I took out my trusty Le Creuset dutch oven and put it on the stove, added some olive oil, took out a beef pot roast, seasoned it well with salt, pepper and garlic powder and then seared it well on both sides over medium high heat.

Then, I took the roast out and layed it on a plate while I added a bit more olive oil to the pot, threw all the veggies in and cooked them until the onions were clear. Then, I pushed them around the sides and stuck my pot roast back in. I poured about 4 cups of beef broth over the roast, put the lid on and stuck it in the oven.

Then, I went to go help Darren.

And by help, I mean, I stood behind him asking important questions like "what are you doing", "do you need help", "how did you learn how to do that", while drinking some more of that Hallowine because honestly - its just like spiked apple cider and what's not to like about that?

Darren ran in to a few problems in the bathroom, so now, our bathroom looks like this:

The biggest problem that we encountered - the walls aren't square! How lovely is that? The base of the counter is attached to the wall, but the top isn't.

The best thing that we can think to do is to rip that counter out and Darren will build a new one and put it in, then the new sink/counter and the new faucet. Hopefully, before we have guests for Thanksgiving.

Since that didn't work out and I was out of questions for Darren, I went to check on the roast. I added a little red wine and let it cook a bit longer (about 2-3 hours total), and then we sat down to enjoy a nice dinner together.

The roast was so tender and juicy, it just completely fell apart. Needless to say, it was delicious!
Even after all of that good food and company, I lost a little less than a pound when I went to Weight Watchers this week, so I am down 12.4 total.
This past week was pretty unventful. I made a new recipe - I'll try to post that sometime this week, because its so easy and delicious - I think y'all will like it.
